The aim of this project is develop methods to manufacture L-fucose utilizing an exopolysaccharide producing fermentation process, and find out a way to produce D-fucose. Additional target is the mapping of the producing methods for certain commercially remarkable special or rare sugars. Developing work includes structural analysis of the exopolysaccharides, purification methods, and optimization of fermentation and downstream processes.
